In this podcast Martin joins award winning chef Hylton Espey to go foraging on the beach at Falmouth. Hylton is head chef had at the Rastella Restaurant, which is located in the town's Merchants Manor Hotel & Spa. The restaurant has just won a third Rosette at the AA Hospitality Awards - but what really attracted Martin was the innovative menu that South African surfer Hylton has evolved since he's been working in Cornwall. In the podcast the young Cape Town chef shares his thoughts on foraging, eating in season, fermenting, sourdough making and gives away some of his trade secrets.
