Recipe: Pork Panang Curry with Bell Peppers, Carrots & Basil (Feeds 2)

For tonight's recipe, you'll need:

  • EQUIPMENT: lg pan, stirring spoon, cutting board, sharp knife, can opener
  • BASICS: olive oil
  • MEAT: 1 lb ground pork
  • PRODUCE: 1/2 yellow onion, 10 baby carrots, 1/2 red bell pepper, 1 orange bell pepper, 10-15 basil leaves, 1 bunch cilantro (optional)
  • CANS & JARS: 1 can coconut water, 1 can coconut milk, 1 Tbsp peanut butter
  • DRY & PACKAGED:
  • ADD'L SEASONINGS: red pepper flakes (optional), crushed keffir lime leaves
