Simple Cauliflower Cream (Paleo and Vegan)

Ingredients:

4 cups cauliflower, florets and stems

1/2 cup cashews, raw unsalted

1 medium onion, peeled and chopped

4 whole cloves garlic, peeled

4 cups almond milk or milk alternate or water

1 T olive oil

2 T Kosher salt

Method:

1. In a medium saucepan over medium heat, cook the onion and garlic in olive oil with 1 T

kosher salt, covered, stirring on occasion until softened, then add the cauliflower and the

cashews and steam, covered 3-4 minutes. Add the almond milk to just cover the cauliflower,

and add the rest of the salt, and bring to a gentle simmer and cook 15-20 minutes on low

heat, stirring until cauliflower is very soft.

2. To make the cream have extra body, you can stir in 1 T arrowroot mixed with 2 T cold water,

then put the mixture in a Vita Mix blender, and pulse the mixture to avoid splash up, and

increase speed until mixture is smooth and creamy. Cool and use in any recipe that calls for

heavy cream, such as Alfredo (add nutritional yeast and garlic powder), Swedish meatballs

(use in place of sour cream), Indian Butter Chicken (use in place of cream and butter),

Country Gravy (add to caramelized onions and sautéed mushrooms), or any recipe that calls

for cream! It’s amazing!

Simple Oven Baked Cauliflower Rice

Ingredients:

4 cups cauliflower, florets and stems, chopped

1/2 medium yellow onion, peeled and minced

1 T salt

Olive oil spray

Method:

1. Put the cauliflower and onion in a food processor and pulse it until it is chopped up fine like

the size of rice. Spread out on a baking pan lined with parchment and lightly spray with olive

oil spray and sprinkle with salt, and bake in the oven, 7-9 minutes at 375 degrees until just

starting to brown. Serve immediately with any recipe that calls for rice, or make Spanish

Cauliflower Rice (add a pinch of paprika and some tomato sauce or salsa), Cajun “Dirty”

Rice ( add a pinch of Cajun seasoning and sautéed mushrooms and onions), or any

flavoring you choose like curry powder for Indian recipes, or ginger and cilantro for Thai and

Vietnamese recipes.

2. Alternately, cool the cooked cauliflower rice and use it in place of cornmeal or flour in a

variety of ways. For example, mix with 2 parts cauliflower rice with 1 part coconut flour or

almond flour, some minced onion, a bit of almond milk, a bit of tapioca flour and 2 egg

whites to make mock Paleo cornbread. Use is same batter to make Paleo Tamale Pie or

Mock Chicken Pot Pie. This versatile batter can be spread thin to make Paleo Pizza Pie, or

formed into rounds to make Paleo Arepas. The possibilities are endless!
