In 2017, the Wall Street Journal said the market for seafood alternatives was $9 million – barely a drop in the ocean compared to meat and dairy alternatives, which are multi-billion dollar industries. But when David Benzaquen was looking for sustainable seafood alternatives to bring to market, he wasn’t focused on the size of his audience. He just wanted to save the ocean in the most delicious way possible.
