Reflexão sobre o papel do vegetal, em particular os frutos, para compreender a sua função simbólica na alimentação na civilização romana. A simbólica associada ao consumo filia-se numa oposição natura/cultura, não é inerente à forma de confeccionar, assente em gradações do cru, mas decorre, sobretudo, do estatuto do espaço de produção das matérias-primas. Considerando que as árvores de fruto, tal como as hortaliças e os vinhedos, eram cultivadas no perímetro sagrado da casa, os alimentos que elas produzem são ideologicamente valorizados como mais civilizados.
