This week, Ira spoke with “Caviar Queen” Nina Manchev, owner of Caviar Collective and Forte Tapas. In this fishy episode of Ira’s Everything Bagel, Nina talks about her love for Bulgarian cuisine and why it is not just meat and potatoes; moving to Las Vegas and, after college and some other jobs, starting her own restaurant; the email that turned her fortunes around; and the unique appeal of caviar and why she wants to make it more accessible.
Nina Manchev, Bulgarian-born and Las Vegas-raised, opened Forte Tapas almost 15 years ago with a dream of preserving old traditions and recipes and bringing her culture and cuisine to a new audience. She has also established Caviar Collective.
Her inspiration comes from an urge and duty to make her ancestors and lineage proud. Born in Sofia, Bulgaria, Nina moved to Las Vegas in 1990 and studied Hospitality, Food and Beverage at UNLV.
