Lucas Phillips, Northwestern student and founder of Brewbike Coffee, has an answer. He believes that the industry is shifting to brand ethos and moving away from positioning through product quality. Brewbike Coffee is a student-run coffee shop that sells cold brew coffee in Northwestern’s Annenberg Hall and Main Library. It recently raised $800,000 to expand its operations.
