Since discovering my love for chicken I could not return to being a vegetarian. It would just be wrong! No more chicken liver pate, chicken kievs (who said they were just for kids), chicken lasagne, chicken pie and don’t even get me started about the slow cooker.

Anyway here are our best chicken recipes for you to try at home and also for you to have the opportunity to burn some fat at the same time!

20 Must Try Fat Burning Soup Recipes:

#1 – Garlic Chicken Lasagne Recipe

garlic chicken lasagne COPY

If you have not tried this yet then you must give it a go! I absolutely love this and it’s a fantastic modern day recipe for the trusted lasagne.

Who said that lasagne MUST be made with beef? A creamy and delicious garlic and cheese sauce with lots of chicken breast do it for me every time!

#2 – My Take On Coronation Chicken

coronation chicken COPY

This reminds me of trips to the salad bar at my local Safeways supermarket. Obviously I am showing my age as Safeways was bought by Morrison’s more than a decade ago!

But it was certainly the highlight of my week and I could never turn down a trip to the supermarket where I would have some delicious coronation chicken. Talk about yummy!

#3 – Chicken Herb Bake

chicken and herby bake COPY

Chicken herby bake anyone?

Well I love this and they are amazing.

If you’ve not mixed some nice herbs with some beautiful chicken breast then you have not lived! Chicken and herbs come together like fish and chips and wow I love them. This is a very simple version that could make a tasty mid week meal.

#4 – Grilled Balsamic Chicken Recipe

grilled balsamic chicken COPY

Get the grill out and add some chicken and you have got a million different dishes at your fingertips. I often get out a chicken breast from the freezer the night before, and then I don’t really plan what I am eating under the next day.

This is mainly because I have a house full of herbs, spices and sauces and its nice when not all your meals are pre-planned.

#5 – One Pot Chicken & Chorizo Rice

chicken and chorizo rice COPY

I live in Portugal so a lot of meals are centred around rice and chorizos and both are on my favourite foods list.

Whether I am in Spain or eating out locally rice and chorizo is a big deal and is often a meal worth sharing. Here is my take on a bit of local culture and I hope you enjoy it!

#6 – Healthy Chicken & Vegetable Curry

healthy chicken veg curry COPY

I grew up on curry’s. My mum and dad had a real thing for them and we had regular trips to our local Indian restaurant. I never got fat from them because we didn’t have fast food and it wasn’t a daily thing.

My favourite was the super fattening butter chicken and you could say it was the worst thing on the menu for a dieter. But what if you want to lose weight but you want to enjoy curry? Well this is when my healthy chicken and vegetable curry enters your universe!

#7 – One Pot Smoked Chicken & Rosemary

one pot smoked chicken and rosemary COPY

I was a late developer as far as rosemary was concerned. I had never discovered its beautiful taste and didn’t know it could bring potatoes alive in a way that salt and pepper couldn’t.

But I also soon realised (with a few weird tasting dishes along the way) that it can bring a whole new beautiful flavour to chicken too. And here is my favourite chicken with it in!

#8 – Oriental Chicken Recipe With A Hint Of Spice

oriental chicken recipe COPY

I love Asian cooking. In fact I was asked recently if living in Portugal I missed English cooking, well I hardly ate any because I was more interested in Asian. In particular food from China and the Orient.

Here is an example of it with my favourite oriental chicken!

#9 – My Super Simple BBQ Chicken Recipe

bbq chicken COPY

With living in Portugal the sun shines for the majority of the year = a LOT of BBQ’s and I love to have more things in a nice BBQ sauce than having the typical burgers in the buns that many associate with barbeque season.

#10 – My Virtually Fat Free Baked Garlic Chicken Recipe

baked garlic chicken COPY

Baked chicken sounds so American doesn’t it? Well occasionally I do love a bit of American cooking. And yes I can do some American cuisine without a burger in sight!!!

Baked chicken in the oven is so simple and if you have that “can’t be bothered to cook” feeling after a long day at work, then it’s perfect for you!

#11 – My 5:2 Diet Lemon Chicken Recipe

lemon chicken

This was actually written for those of you on the 5:2 diet for your 500 calories fasting day. This means that it is super low in calories so that it will satisfy them. Also chicken is full of protein = keeps you full for much longer so tuck in without feeling guilty!

#12 – My Philadelphia Light Chicken Taco Recipe

Whenever I think of a Taco recipe, I always think that I need bigger sized jeans. I just look and think about them and I am fat.

#15 – My Slimming World Coconut Chicken Recipe

These are how we have them over lunch and they are delicious. So dig in and enjoy!

#17 – My Slimming World Chicken Liver Pate

chicken liver pate

Homemade pate was what my parents served at dinner parties when I was growing up. And many of you that are in your 20’s are probably thinking that they are really old school now and totally out of touch with modern day eating.

Well I loved it then and I still love my pate now. Here is my favourite homemade one = chicken liver pate!

#18 – My Slimming World Low Fat Chicken Fajitas Recipe

I love chicken Fajitas and they just taste amazing and give you a lovely kick of spice. What is not to love? Lots of chicken, wraps, Mexican spices and then whatever vegetables you have in to go on them!
