This is not an attempt to run Nando's down in any way, just an attempt to make my own! Actually, a big thanks to them for being so inventive! If you want to see our seminar on making Halloumi please go to www.kitchennewbie.com If you would like to buy our booklet on Easy Cheesemaking, then please visit : https://www.kitchennewbie.com/product/easy-cheesemaking/ The recipe for our version of the Piri Piri seasoning - though we used cayenne instead so perhaps we should call it cayenne cayenne!! The units are 'lots' - one lot of this, one lot of that etc. The recipe came from the web, with a few amendments. 1 salt 1/2 Cinnamon 1/2 cardamon 1 Sugar (Or half - it's up to you) 1/2 ground ginger 2 Sweet paprika 1 Cayenne 2 ground garlic - I didn't have any so I blitzed some fresh 2 Dried oregano Once you have your halloumi you can moisten it, coat in breadcrumbs, moisten again with a little water and sprinkle the mixture on all sides of the cheese. You can fry, grill, BBQ or bake in a hot oven on an oiled baking tray at 220ºC, 425 - 450ºF, Gas 7 For the Tomato and pepper dip 1 beef tomato 1/2 large red pepper 1/2 red onion 1 clove garlic 1 teaspoon chopped parsley 2 tablespoons lemon juice 2 tablespoons honey Chop finely and blitz away in a food processor
