Ratatouille Style Pasta Bake You don’t have to simply use pasta, the base can be used for many meals. This recipe is so versatile. You will need 2 large courgettes 1 aubergeine 1 large red onion 1 red and 1 green capsicum 8 large mushrooms, chopped into quarters (about 1 cm or a bit more) 1 400 g can chopped tomatoes 250 ml passata 1/2 teaspoon dried oregano 2 tablespoons fresh chopped parsley 3 cloves of garlic, grated Salt and pepper Lots of cheese of your choice Oil for cooking Roast the vegetables in an oiled tin at 190ºC, 375ºF, Gas 5 for 15 minutes While they are roasting place the tomatoes, passata, parsley, garlic and oregano into a pan, and heat gently - simmering for 5 minutes Transfer the vegetables to the pan and simmer for a further 5 minutes Cook your pasta of choice in water Transfer the pasta to the baking tray you roasted the vegetables in Pour the vegetable sauce over the pasta Sprinkle with the cheese (or cheeses) of your choice Pop back in the oven at 180ºC, 350ºF, Gas 4 for about 4 minutes You can augment this in almost any way you wish, add minced pork, beef, chicken, fish, anything!
