Mushroom Casserole: 101 Cookbooks

Brown rice, mushrooms, and creamy dairy are topped with parmesan cheese for this vegetarian casserole. Toasted almonds and fresh tarragon add a nice crunch and freshness at the finish.


  • Consider doubling the amount of mushrooms or adding in different varieties for more mushroom flavor.

  • We found this baked a little dry. Next time we’ll add a quarter cup of water to see if the rice stays soft.

  • Don’t skip the almonds (if you can). We loved the crunch they added to the casserole.

The BEST Baked Pork Tenderloin: Creme de la Crumb

Ryan was on the hunt for a practical and tasty solution to dinner. Using his patented search method he came upon this gem of a recipe. A whole pork loin is rubbed with a pantry-friendly spice mix of cumin, garlic, Italian seasoning and paprika. A squeeze of lemon, a short time in a hot oven and you have dinner.


  • You can easily make either one or two pork loins with this recipe. Halve the seasonings if you’re cooking for a smaller crowd.

  • Turn this into a sheet pan dinner and start halved, seasoned squash on the pan first. After 20 minutes (for butternut squash, less for acorn or delicata), pull out the pan, place the pork on the sheet, and pop back in the oven.

Instant Pot (Pressure Cooker) Carnitas :Nom Nom Paleo

Fragrant with orange, cumin, and garlic, pork carnitas are the star of your next burrito bowl or taco night. All the ingredients- pork shoulder, garlic, orange, onion- go in the pressure cooker at once. What comes out is shreddable pork in a lot less time, thanks to the Instant Pot.


  • Double the recipe at your own risk- we found the meat wasn’t as flavorful when we did do.

  • Make sure to salt the pork adequately. The flavor depends on it!

  • Carnitas freeze beautifully; nice to have for impromptu Taco Tuesday.
