Looking for Vegetarian Thermomix Options for a BBQ?

In Episode 137, we’re tackling the wonderful world of vegetarianism and sharing great ideas for a Vegetarian Thermomix BBQ. We have heaps of listeners who follow a plant based diet and there are certainly health, environmental and cost benefits that can be enjoyed. We have found three recipes that we know you’ll love whether you’re a herbavore, omnivore or carnivore!

It’s Healthy Eating month here at The 4 Blades so we’re exploring what health means for a range of dietary types. This week our challenge was to find or create 3 recipes for a Vegetarian Thermomix BBQ, here’s what we came up with:

Recipe 1 – Thermomix Mushroom Burgers

We were super sceptical of the whole idea of a mushroom burger when we started. However Joe had seen quite a few articles about mushrooms being the saviour for the planet so we decided to give it a crack. The result? Utter deliciousness! These burgers were SO good. Vegos need not feel left out at a BBQ anymore, these burgers are super tasty and look like a hamburger! A must have for your Vegetarian Thermomix BBQ!

Recipe 2 Thermomix Potato Bake (from Thermobexta)

This is divine. We devoured this dish. Thermobexta has a great blog for all things vegetarian Thermomix. We made a few alterations to suit our dietary needs and it still turned out great. We replaced the cream for almond milk + 1/4 tsp of xanthan gum, and swapped the cow’s milk for almond milk. We also used 25g of stock paste instead of 35g (to suit our little person). Everything else was the same and the method works like a treat. It’s like a delicious, potato-ey, creamy lasagne.

Recipe 3 – Whole Roasted Cauliflower with Roast Capsicum Pesto Stuffing

We had the idea to make a whole roasted cauliflower after seeing some videos late last year of a roast cauliflower in place of a turkey for Thanksgiving. We really wanted to give that a go ourselves but ended up doing it quite differently. Instead of a sauce we thought… ‘hey there’s this big hole where the stem used to be in the cauliflower… how about we try a stuffing?’ and as we were talking about pesto Joe accidentally said ‘resto’ which made us think of a roast capsicum pesto.

This is delicious! The stuffing itself is to die for and would make an excellent stand alone dip. Another thing we did differently to the videos, was instead of cutting it into quarters we sliced the cauliflower like a loaf of bread. It fell apart beautifully and served up a treat. This is how you could serve it:
