“How are we going to feed a growing population healthy food without destroying the planet?” This is the question that Gunhild Stordalen set out to answer when she founded EAT - an Oslo based non-profit. Five years later, and thanks to the diligent work of 37 scientists from 16 different countries, the foundation has presented its answer in form of the EAT Lancet Report. A detailed collection of scientific research outlining what makes up a healthy diet, what makes up a diet that is environmentally sustainable… and where that dietary sweet spot lies, where these two (healthy AND sustainable) meet: the ‘planetary health diet’.

We talk to Dr. Sandro Demaio, the CEO of EAT, about this proposed diet (turns out, Italian nonnas got it pretty right back in the day), what needs to change in current food production and why ‘Queer-Eyeing’ your dinner isn’t always the best way to turn the veggie-suspicious into brusselsprout-enthusiasts (no offence, Antoni).
