Opening a restaurant is challenging in the best of times, but throw in a global pandemic and it's brutal. Just ask Brian McLaughlin, owner of soon-to-launch Locales Tacos y Tequila in Hingham, Massachusetts. McLaughlin had planned to open his taco shop in July 2020, but sourcing equipment, finding tradespeople to commit to the job, ever-evolving Covid protocols and regulations, supply chain disruptions, skyrocketing food costs and a restaurant staff shortage hampered his efforts.
