On today's episode of 50 Tastes of Gray, I had the pleasure of interviewing Michael Fenster, also known as Chef Dr. Mike. Michael is a one-of-a-kind individual as he is both a board-certified interventional cardiologist and a professional chef.

During our conversation, we explored various topics, including diet, nutrition, fighting disease, plant-based diets, climate change, and their impact on health.

Michael shared his expertise on the relationships between food, flavor, and science, as well as his passion for spices and flavorings. Interestingly, despite Michael being in Montana and I from Hawaii, he and I share a common birthplace in New York.
Michael's extensive experience includes faculty appointments at The Kansas Health Science Center, West Virginia University School of Medicine, and The University of Montana, where he teaches one of the leading courses on Culinary Medicine.
