Paul Wagner believes that wine is the most intimate expression of human culture and shows his knowledge of wines from all over the world. In California wine is made from 60 different grapes, in France 200, in Italy 4,000 to 6,000. Wagner noted that one could drive around Spain for a month and never taste all the different wines, with local foods of course, and never taste them all.
