Ep. 017 Shrimp Pesto Pasta

On the menu today, Yvonne's cooking up some Shrimp Pesto Pasta. The ladies share some laughs with a few jokes, share some risky business in cooking new foods, share about thing-a-ma-jigs or whats-you-call-its, as well as updates on Jen's commitments.
Shrimp Pesto Pasta
Ingredients
- 2 Tbsp Olive oil
- 1 diced onion
- 1 diced garlic
- 1 diced yellow pepper
- 1 diced carrot
- Cherry tomatoes (or other small tomato)
- Handful of spinach (if desired)
- Jar of pesto sauce
- Box of preferred noodles (farfalle, rotini, macaroni) cooked according to package directions
-1 lb of thawed medium shrimp (tails removed)
Cooking Instructions
- Saute veggies in olive oil on medium heat until soft (10-15 minutes)
- Add tomatoes, (if you want cooked tomatoes) and cook for one minute. Skip to step 5 if you prefer fresh tomatoes
- Add shrimp. Cook for approximately 5-8 minutes or until they are no longer translucent and are pink/white colored and smaller in size.
- Add jar of basil, mix well
- Add tomatoes (if desired can also add some spinach at this time.)
- Mix well and serve over cooked pasta.
- Garnish with parmesan cheese or fresh basil.
