Nutrition is core to human health. Differences in our biochemistry, metabolism, genetics, and microbiota all contribute to the dramatic differences among individuals in response to their nutrition, according to the American Nutrition Association. Personalized nutrition takes into account human individuality—such as health status and social, cultural, economic, and linguistic needs—to drive nutrition strategies that can prevent, manage, and treat disease and optimize a patient's health. Today we talk about personalized nutrition and cultural competency with Evelisse Capó, PharmD, Director of Culinary and Spanish Content for the T. Colin Campbell Center for Nutrition Studies. The Campbell Center is a nonprofit committed to increasing awareness of the extraordinary impact that food has on the health of our bodies, our communities, and our planet. Dr. Capó is also a certified facilitator for the Physicians Committee’s Food for Life Program. She is presenting on nutrition and cultural competency at the org's International Conference on Nutrition in Medicine next month. Dr. Capó practices culinary medicine and plant-based coaching in her business The Food Pharmacy and Farmacia en la Cocina in Florida.
