For the past 8 weeks I've interviewed some of the best Tex-Mex Barbecue joint's for our #TexMexBBQSeries. This week's episode will conclude our Series and we are definitely ending with a Bang!! In our Final episode of the series I chat with the OG of Tex-Mex BBQ, Miguel Vidal of Valentina's Tex-Mex Barbecue. This is easily one of my favorite interviews since I started the podcast. I'd never heard of a Tex-Mex Barbecue joint until I ran across Valentina's a few years back. The Smell of Mesquite, the fluffy tortillas, the Beans, the fresh Salsa, the smashed avocado with salt, the beautiful brisket, heck everything Valentina's offers reminds me of my upbringing in West Texas. Miguel grew up in San Antonio Texas and worked in the restaurant industry from an early age. He was a talented Soccer Player that aspired to be a professional but a knee injury caused him to trade the Pitch for a Lot filled with Barbecue Pits and Picnic Tables. This is an inspiring rags to riches story that only keeps getting better. I hope you enjoy this episode!
