Brian Clivaz is as much a part of London's hospitality scene as The Savoy and Simpson's-in-the-Strand. In fact he's worked with both of them. He trained with Anton Mosimann, revived the Arts Club, and rubbed shoulders with the great and the good from Elizabeth Taylor to Princess Margaret, Liza Minelli and Her Majesty the Queen. The Telegraph called him “larger than life” but he calls himself a bon viveur.
In this interview we talk about maintaining the legacy of London's oldest French restaurant L'Escargot, which over the years has hosted Lucian Freud, Francis Bacon, Frank Sinatra, Ella Fitzgerald; the future of Soho, persuading Gwyneth Paltrow to head the membership committee of the Arts Club, and what inspired Maurice Chevalier to wear a boater.
