Tear the corn tortillas into small bite-sizes bits and fry them in the vegetable oil in a large pan on the stove. 2. When they are crispy add eggs that are scrambled into the pan and stir until eggs are cooked. Put in 2-3 Tablespoons of salsa and top with cheese. Portion depends on how many are eating. 4 tortillas work for 2 folks with 2 eggs. Salsa Put all ingredients into a blender 1 24 oz can of petite diced tomatoes. 2 Whole jalapenos with the tops cut off (leave in the seeds) 1 bunch of cilantro, cleaned and stems cut off. 3 T olive oil 3-4 cloves of garlic Salt to taste Blend until chunky.
