And finally, here's the recipe we're all trying out next:
250grams dried omena
Oil for frying
2 tablespoons oil
1 medium red onion, finely chopped
1 tablespoon crushed garlic
1/2 tablespoon crushed ginger
1 green chilli, sliced , optional
1 teaspoon turmeric powder
1 tablespoon curry powder
Salt and pepper to taste
2 medium onions, grated
1/2 cup coconut milk
Half lemon
Start by cleaning omena. Remove any particles or residue then soak in water for a few minutes. Rinse until water is clear.
Pat dry and fry in a pan in hot oil until golden. Remove from oil and set aside.
In a sufuria, heat two tablespoons of oil and cook onion until translucent.
Add garlic and ginger and cook for 30 seconds.
Add spices and chilli if using and cook for a minute.
Add tomatoes and cook for 3-5 minutes or until soft. Taste for seasoning and adjust accordingly.
Add coconut milk and simmer for 3 minutes.
Add fried omena and mix.
Cook for 3-5 minutes.
Turn off heat.
Squeeze juice of half a lemon and serve with ugali and greens.
