Throughout the western world one thing you can bank on is that there will be fewer butchers and shops than the year before. But now, a new generation of butchers from Brooklyn to London to Belgium are fighting back against domineering supermarket chains and challenging this trend.

What this means is giving people something big chains can’t – a true story about their meat. The type of customer this will attract will be those deterred by GMOs, hormones, and non-organic, but not by high prices. In this episode of Meat Talk, Velo Mitrovich talks to the head of the UK’s National Craft Butchers association and shares with you a discovery he made in Belgium which just might be the hippest and most successful shop of its kind.
