In Episode 41 I sat with expat Pili the owner and operator of Pili's Kitchen in Hacienda Iguana Nicaragua. Pili and I have been friends for 10 years and I've watched her grow her business for nothing into one of the top restaurants in Nicaragua. In an environment that chews people up and spits them out, Pili is one of the few with staying power.
