While Kelly's technical title is Director of Seafood Purchasing, in his heart, he is a Fish Monger. He still lives in Florida, he still goes to the docks to pick out fish, and he is as passionate about the sea as anyone I have met. In this conversation, leading into Alaskan Halibut season, Kelly talks about his love of the ocean, sustainability, his job, and surfing in the shark attack capitol of the world. (yes, he tells shark stories) We also talk about What Chef's Wants presence in Alaska to bring some of the best seafood in the world to their customers.
