In Defending Beef: The Ecological and Nutritional Case for Meat (Chelsea Green, 2021), Nicolette Hahn Niman makes the expanded case for large ruminants as part of the solution to the climate crisis. In our discussion, Hahn Niman does some myth-busting and presents a system for managing beef cattle that can enhance ecosystems rather than degrade them.
