Couscous is one of those foods that everyone knows how it tastes, but few know where it came from. Most people assume that it’s just another type of pasta. But while there are many similarities between couscous and pasta, there are some key differences.

First off, couscous isn’t actually pasta. Instead, it’s a grain dish similar to polenta. Semolina is ground into a fine powder and mixed with hot water to make a paste. This paste is left to sit for a short period of time, allowing the starch granules to swell up and form tiny balls called gnocchi. These gnocchi are then cooked like pasta.
