隨著時代的變遷，國人健康意識高漲，農業也漸漸轉型。雲林縣是全臺農業大縣，位於縣內的華興有機農場是一座以種植葉菜為主的有機農場，由西螺第74班產銷班組成。華興有機農場班長廖瑞生提到，剛開始種植有機蔬菜時，經營很困難，加上有機蔬菜推行不易，讓一開始做有機農業的他們備受打擊。
傳統農業經常使用化學肥料、除草劑、除蟲劑等，對土地造成極大傷害，環保風潮興起後，許多人改採有機農業的模式種植作物，華興有機農場老闆廖瑞生表示，一開始經營十分不容易，因為有機蔬菜外觀較醜，葉菜都會有蟲蛀，甚至採摘時只剩根、莖，所以時常遭到退貨。
廖班長強調，農民種植的有機農產品不使用化學肥料，配合政府規定，通過381項農藥殘留檢測，可以作為營養午餐食材，提供學生最營養、最健康的飲食。他也期望更多人接受有機蔬菜，因為透過有機農業，能夠讓農業更進步，歸還大地一片淨土

將農業廢料變養分 首創永續種菇
幾經尋覓，他們找到一處舊菇場，落腳於空氣清新、水質潔淨的平溪山區，溼度夠、負離子高，是菇類喜歡的環境。地點確定後，他們想從養菌、製作菇包、菇種的品種與季節輪替到出貨都自己包辦，並挑戰研發「不用新資源、能循環利用」的菇包。
他們不斷自行嘗試，並得到農業試驗所助理研究員李瑋崧的技術輔導，最後找到在台灣供應充足且種植過程友善的原料——彰化的有機稻稈、南投的未加工桂竹屑，以及有雨林聯盟認證（RAC）、好咖啡認證（UTZ）的咖啡渣製作成「大樹包」，最終將整套流程都確立後，台灣第一座以農業廢棄物創造友善循環的菇場「米大菇食」，就這麼誕生了
