The following is my conversation with Ya'acov Oryah, one of Israel's most creative kosher winemakers. Ya'acov has a remarkable relationship with the desert, starting with his own winery Asif in 2008, located next to the desert city of Arad. He later moved on to the Midbar winery, also in Arad, and then joined Psâgot, located in the mountains of Jerusalem but never lost his desire to return someday to the desert.
An offer to become the winemaker for Pinto, a newly created winery with its own vineyards deep in Israel's desert in Yeruchum, was just the right incentive to have Ya'acov return to his desert challenge. This conversation is a bit technical but still enjoyable for those curious about the nuances of making wine in one of the most challenging environments.
