Recipe:

Cheddar Cheese Soup - 6 servings

  • 1/4 lb. bacon fine chopped
  • 1 med red union med chop (we chop fine)
  • 1/2 c celery fine chop
  • 1/2 c carrots shredded
  • 3 Tbsp AP flour
  • 3 c whole milk
  • 2 c chicken stock
  • 12 oz. grated white cheddar
  • 3 dashes Tabasco
  • 1/2 tsp Worcestershire
  • 1/2 c Moosehead Canadian Ale, room temp
  • salt & pepper to taste
  • 1 Tbsp sliced chives to garnish

  1. In a large heavy bottomed pot, cook bacon over medium heat until wilted
  2. Add onions, carrots to pot & cook until onions are translucent & bacon crisp.
  3. Sprinkle in flour, stir constantly for 2 min. Stir in milk & stock a little at a time, blending well. Bring to boil, then cover & simmer 15 min.
  4. Remove from heat & whisk in cheese, Tabasco, Worcestershire & ale. Salt & pepper to taste. Garnish w/ chives if desired.
