Springtime in the Northwoods is a beautiful time of year when the natural world begins waking up from a long winter hibernation. We all have these natural rhythms within us as well that are intimately connected to the place we call home. For us in the North, this is a special time when we can tap into this much needed flow of life by literally tapping into the sap flow of Maple trees here at our farmstead. We also love savoring this sap fresh before heating & evaporating it into Maple Syrup. It is like drinking slightly sweetened water that is incredibly refreshing and also has trace minerals, antioxidants & a natural form of sugar. Learn more about this tradition from several voices speaking about the spirit of making Maple Syrup.

...the truth is that the earth endows us with great gifts, the other half is that the gift is not enough. The responsibility does not lie with the maples alone. The other half belongs to us; we participate in its transformation. It is our work, and our gratitude, that distills the sweetness. - Robin Wall Kimmerer, Braiding Sweetgrass
