The eggplant is healthy and full of vitamins. But if you've ever wondered how exactly the purple vegetable is prepared and whether you can eat it raw, then you're not alone. Here's what you should know about the eggplant.

Aubergines are particularly popular in Mediterranean cuisine and are very diverse. They can be roasted on their own and used as a side dish, or baked with minced meat and cheese and served as a main course. Aubergines can also be served as a dip, for example as baba ganoush, with grilled meat or flatbread. Thanks to their elongated size, aubergines can also be filled with many delicacies such as walnuts, dates, pomegranate seeds or lentils and tahini and baked in the oven. In Greek cuisine they are also often breaded and eaten with tzatziki.

Why you should eat eggplant
The eggplant contains many vitamins and minerals that strengthen your immune system and boost your metabolism. The vegetable is high in potassium, vitamin C, and antioxidants that help protect the body from harmful substances. Eggplant skins are also rich in B vitamins.

How to store eggplants
However, you should only buy aubergines if you intend to use them within the next three days. They should also not be kept in the refrigerator, but preferably alone in a vegetable basket. In this way, their valuable ingredients are preserved. The flesh of the aubergine should also be white after slicing. Brown spots are an indication that the vegetable has been stored for too long.
