Let’s start with what you’ll need. Grab some ground beef, onions, garlic, taco seasoning, corn tortillas, enchilada sauce, cheddar cheese, Monterey Jack cheese, and fresh cilantro. Optional ingredients include bell peppers, mushrooms, diced jalapeños, and maybe some cooked rice or beans to bulk it up.

Now, why are these enchiladas so special? It’s all about the secret ingredient in our taco seasoning mix, which includes a touch of cinnamon. Yes, cinnamon! It adds an unexpected warmth and depth that complements the beef beautifully.

Here’s how you make it:
