In this fresh drop - we're joined by Chef Francis Pascal, the founder of Vendador, a nomadic[ish] Chicago-based fine private dining company that focuses on employee forward practices.
Originally from Albania - Francis talks to us about how food is the vessel for connection and how he translates that through his cuisine and overall environment as well.

After gaining experience at Japonais by Morimoto, Momotaro, and Roister of the Alinea Group, Chef Pascal decided to launch his own platform. However - he aspired to doing things differently.
He wanted to create a workplace culture that prioritized the well-being and growth of his employees while also providing curatorial experiences for his guests.

In this drop, Chef Pascal shares his insights into the importance of creating a positive workplace culture, the challenges he has faced, and his overall process.

We are fortunate to be a community narrative to showcase realities such as these and it feels too good to have Francis arrive as a stranger and leave as a friend.
