Indy’s Dole Whip
2 oz blended aged rum (Plantation Original Dark)
1 1/2 oz pineapple juice
1/2 oz orange juice
1/4 oz lemon juice
1/4 oz simple syrup
1/4 oz date syrup*
Combine with 1 cup of crushed ice. Flash blend for 10 seconds. Pour unstrained into a Tiki tOny Mai Tai glass. Dust with cinnamon sugar**.
* To make date syrup, combine 20 pitted Medjool dates with 3 cups of water in a saucepan. Bring to a boil, reduce heat, and simmer for 20 minutes. Strain dates through cheesecloth and return to pan. Simmer and reduce to approximately 1 cup.
** Cinnamon sugar: 1/4 cup granulated sugar combined with 1 tbsp of ground cinnamon. Combine into a shaker for ease of distribution.
Jeep Turnover
2 oz blended aged rum (Appleton Signature)
1 oz oz banana liqueur (Giffard)
3/4 oz fresh lime juice
3/4 oz guava nectar
1/2 oz passion fruit syrup
Shake with ice cubes. Pour unstrained into a Tiki tOny Mai Tai glass. Garnish with a couple of pineapple leaves skewered to a cocktail pick.
