A good macaron is a beautiful thing - the delicate crack of the shell, the slight chew, the velvety ganache or rich caramel that lifts the whole experience to another level. Like a lot of French patisserie, they can be tricky to master but Jath from The Sugar Hobby has not only perfected them, she has turned them into an art form. From her favourite book covers to floral art and the cutest little sea critters, Jath has made them all in mac form. In our chat, she tells me about writing her first online course for home bakers, how she comes up with her clever designs and she generously gives her best tips for mastering macs and busts some common myths along the way.
