Peter and Sam discuss the third episode of Top Chef Season 14, "Choke Holds and Clammy Hands." The first episode of the season to co-mingle rookies and veterans as they race in a mise-en-place challenge and compete in a head to head elimination challenge for all the radishes.

This week we break down the best features of a banh mi and when you should get them (when the baguettes are hot), we also deep dive into a couple cooking techniques we saw on this episode so you too can braise or emulisfy to your stomach's desire, and why we've never heard of white chocolate pop rocks but feel like we need more in our lives.

Peter's recipe of the week is inspired by the humble radish in everyone's dish: Braised Daikon with Chicken and Shemeji Mushrooms in a Dashi Butter Broth.
