Carrot Slaw Recipe

Serves 4 as a side dish, 2 as a main dish

1 cup grated carrot
2 cups grated cabbage (red, for more antioxidant power!)
1/3 cup full fat coconut milk
1 tablespoon raw honey
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1/4 teaspoon poppy seeds
A pinch of salt and pepper, to taste
1 tablespoon Sriracha sauce (optional for some spice)

Directions

Grate 1 cup carrot.
Slice cabbage thinly for 2 cups and combine in a large bowl with carrots.

In a smaller mixing bowl, mix coconut milk, honey, apple cider vinegar, olive oil, poppy seeds, salt and pepper to test and add Sriracha if using.

Add dressing to slaw mix and toss well.

Serve as a side salad to BBQ pulled pork, as a filling for fish tacos, or as a main salad topped with pistachios.

Store in a glass container in refrigerator for up to 4 days.
