With that in mind, we made sure to check out some of the many plant-based companies on the showroom floor. Plant-based burgers are all the rage nowadays, but what about plant-based seafood? We decided to stop by the Ocean Hugger Foods Booth to learn more about the company's plant-based seafood products. After James Corwell, certified master chef and founder of Ocean Hugger Foods visited the Tsukiji Market in Japan and saw how much tuna was being auctioned off for the use of Sushi, he decided he wanted to create solutions to better protect our ocean's food supply. The first product the company developed was Ahimi®, a plant-based alternative to raw tuna often used to make sushi. "It took knowing a little bit about the flavors of Japanese cuisine and tuna and tomatoes are those three things that kinda come together. Basically its the fifth taste umami or savory which is prevalent in Japanese sushi cuisine. It's also prevalent in tuna and tomatoes. So we're able to put 1, 2 & 3 together to make Ahimi," says Corwell. The foodservice division of Tyson specializes in developing solutions for schools, colleges, healthcare institutions, restaurants and more. Although Tyson is known for its chicken products, the company's portfolio is vast and isn't made up of just meat. On the showroom floor, we met up with Chris Kline, executive chef of Tyson Foodservice to walk us through some of the company's newest food innovations like the Jimmy Dean® Stuffed Hash Browns with Sausage & Gravy. "Some of the things we were looking at for the hashbrown is we wanted a product that was a form that folks were familiar with and at the same time, had portability or that hand-held ability that you can carry on the go," says Kline. "If you think of schools, they want that hand-held, crave-able, carry-to-class type of product and this delivers on everything they've either grown up with and once again a flavor and format, they're familiar with." To round out our food innovation tour at the National Restaurant Association Show, we visited another plant-based company Faba Butter on the showroom floor to chat with both the co-founders Aidan Altman and Andrew McClure to learn why they felt the need to introduce this butter replacement. "Andrew and I are from the midwest and we grow up eating butter and as we got older and we got into the food system, we realized that a lot of dairy product and meat product come from these industrial farms that are unsustainable and put an environmental strain on the planet. However, in the butter space specifically, the only alternative we could get in the grocery store were the margarines of the world. Products that have been around for decades that we didn't want to put in our bodies," says Altman. "So we saw a huge opportunity to make a plant-based butter that actually works with the functional integrity of a dairy butter that was also clean and sustainable." Across various parts of the country, health department officials are asking restaurants to voluntarily pull CBD-infused foods and drinks off menus. The latest local and regional governments that have reportedly taken steps against CBD are New York City, California, Texas, and Ohio banning the substance from restaurants and retail stores. For example, according to the New York City’s official government website , beginning July 1, New York City restaurants that don’t comply with the CBD ban voluntarily could be embargoed of their CBD products by the health department... and by October 1, officials “will begin issuing violations to restaurants and retailers for offering CBD-laced foods and drinks. Violations may be subject to fines as well as violation points that count toward the establishment’s letter grade.” CBD, or cannabidiol, which derives from cannabis, doesn’t cause the psychoactive effects for the lack of enough THC—the compound that gives people the “high” sensation. In fact, CBD proponents claim the substance is mainly used for its therapeutic benefits helping people relax, ease pain, anxiety, insomnia, and even depression. Despite the fact that not many studies have been done on cannabidiol in human trials, as pointed out by a recent New York Times article , we are seeing an immense amount of CBD products being sold across the country, with Walgreens as the latest retailer to announce plans to sell creams, patches, and sprays in nearly 1,500 stores in select states. So, why is it being pulled out of the restaurant space, specifically? Although, the farm bill that was passed in December 2018 legalized industrial hemp in the U.S., this only means industrial hemp was removed from the controlled substance category. Anything that is put in foods and drinks has to be regulated by the Food and Drug Administration and, as of right now, CBD is not determined safe or effective for other health conditions aside from being an active ingredient in an approved drug that treats two rare and severe forms of epilepsy . The FDA regulations are something different and there’s a huge push from lawmakers to change this. Since there is no federal law specifically addressing CBD-laced edibles, some states, like Colorado and Maine, have already attempted to clarify the status of the substance by passing laws allowing the addition of CBD to food, as reported by Reuters . California and Texas have introduced bi-partisan legislation to do the same, as reported by the Associated Press . Last week, the FDA slated the first public hearing to take place May 31 to discuss how to regulate CBD food and beverage products. Consumers' eating habits are constantly evolving and the millennial population is paving the way. According to a 2017 survey by Surverygoo, commissioned by Welch’s Global Ingredients Group, 92 percent of millennials (consumers between the ages of 18 and 35) are replacing full meals with snacks. Specifically, 26 percent of those surveyed eat a snack over a meal about four times a week. This trend is only gaining momentum as more consumers adopt healthier lifestyles. As snacking increases, the more diners are looking for grab-and-go options at restaurants and at grocery stores. One of the most loved snacks on the market remains yogurt. Yogurt brands have been ahead of the curve when it comes to catering to those with dietary restrictions, which is more important in today's market than ever. “Consumers want to eat in ways that address real dietary concerns, but they can’t do it alone. They need help from food manufacturers to offer products formulated with an eye towards food sensitivities and other specialized diets, and they need help from retailers to stock shelves with a proper assortment of foods that cater to a wider variety of consumer needs,” said Andrew Mandzy, Director, Strategic Insights, Nielsen. Music plays a pivotal role in a restaurant's ambiance. It helps to convey the vibe you want your restaurant to have. However, as Adam Melrose, the chief playlist officer of Control Play , says music tends to take a back seat. But music can really enhance the brand experience in multiple ways, starting with the team members at the restaurant. "Music has a lot to do even with just the energy of the staff members," says Melrose in the video. "If the staff is having more fun, their gonna have more fun with your customer." Music on loudspeakers is common, but at most restaurants, there are also TV screens meant to add entertainment value. Mostly, sports or ChiveTV are popular programs being played for diners. Melrose points out that in 2017, 25 percent of all music listened to all over the world was done while watching music videos . With that being said, playing music videos on screens has its advantages from an operator standpoint. "Once the videos are part of the experience, people are staying longer and that equates to another drink or another shareable or a just longer stay time, which only increases how much money they're going to spend while there," says Melrose. 2019 is proving to be an innovative year for the foodservice industry. Technological advances such as cashless stores and apps that help fill more restaurant seats with hungry diners aren’t the only latest trends. Some of the latest innovations we’ve seen at Foodable are introducing technological advances, like robots, to the grocery store space.Grocery chain Stop and Shop , is partnering with mobile market startup Robomart to bring a new method of grocery delivery to Boston this Spring. Instead of having customers order their groceries and deliver them to the door, customers will be able to order a remote-operated Robomart vehicle to their door via an app and pick out their own produce from a pre-stocked vehicle. The Robomart app utilizes a patent-pending RFID “check-out free” system, charging customers automatically for items. Another way technology is becoming more prevalent in the grocery store space is shown by Giant Food Stores .Recently, the chain introduced a robot named Marty to its 172 United States stores. Marty is built to roam around the store, looking for spills and trip hazards, which are reported to store employees. But that’s not all Marty can do, the robot can scan shelves for items that are out of stock, and perform price checks, looking for discrepancies between the shelf and the store’s scanning system.…

Foodable had the chance to catch up with The Organic Coup , the first certified organic fast food restaurant, once again, but this time at the Winter Fancy Food Show in San Francisco. On this episode of On Foodable , Paul Barron sits down with the brand’s founder, Erica Welton, to talk about the latest achievements and future plans. We first learned about The Organic Coup in 2016 when Foodable had the chance to visit its first location to learn about the brand in depth . Although the certified organic fried chicken remains at the core of this fast food concept with the fried chicken sandwich still being the favored menu item, the brand has started to develop six grab-and-go retail products that are currently featured at some Whole Food locations in Northern California. This fast food joint has grown to 10 locations in just a little over three years. However, Welton believes that when she looks back at the brand’s history one day she’ll say that the “breakout moment” for The Organic Coup came once it opened a concession shop at a major sports venue like Oracle Park (formerly known as the AT&T Park), home of the San Francisco Giants. We’re at the “San Francisco Giants ballpark and of course that was not part of the business plan, not a part of our original thought process...,” says Welton. “but, the San Francisco Giants, they had so many fan requests... requesting organic, clean, healthy food... food that they can feel good about eating… and some of their executives had been eating in our San Francisco location and so they brought us over.” This lead The Organic Coup to later open at the Levi’s Stadium , home of the 49ers. In the last game of the season— during the College National Championship Game — the brand ended up closing as the No. 1 concession stand for the stadium making $37,000 in just four hours.…

In this episode of On Foodable , Paul Barron sits down with Bryan Meehan, CEO of Blue Bottle Coffee , at the Winter Fancy Food Show in San Francisco. The two chat about specialty coffee, company expansion, and branding among other topics. In 2011, Meehan—whose retail experience comes from co-founding UK-based brands like Nude Skincare and Fresh & Wild, an organic market which is now owned by Whole Foods—came across James Freeman, founder of Blue Bottle Coffee Company and said: “What are you doing with this company? I love it. Can I help you?” Fast forward to today and Meehan has been the CEO of Blue Bottle Coffee Company for over six years now and has been hard at work growing the company to 60 locations in collaboration with James Freeman. The fast expansion boost was partially thanks to the Nestle acquisition that took place in 2017, but Meehan assures Blue Bottle works as an independent entity under that larger umbrella and the company’s growth has not come at the expense of product quality. “A lot of companies here worry about with growth ‘If I could just maintain what I have then everything is going to be fine…’ but as you know you can’t succeed long-term with that so we push ourselves to try and get better every year,” says Meehan. “With scale, the worry always with a company like Blue Bottle, and I see it in the industry today… with scale it’s so easy to just to take shortcuts and compromise on quality,” says Meehan. “We need to go back to focusing on why we started in the industry and in specialty coffee is that these products have got to taste delicious. If it’s not delicious we shouldn’t do it.” Blue Bottle has taken its brand internationally with 10 stores in Japan and recently announced it’s getting ready to launch its first South Korea location in Seoul.…
