Stephen Koster and his wife Anne Stuart Koster have accepted the daunting task of replacing a legend in Chef John Toler of Bloomsbury Bistro. Despite the challenges of replacing a legend, reopening during Covid and all the financial burdens of opening a restaurant during any period, the Kosters believe this is what they were meant to be doing! Here's what we learned;

  • What it means to be a chef run restaurant?
  • The confusion of French bistro vs New American fare?
  • When we truly learn, it's often from our mistakes.
  • Matt fumbles the famous Steve Jobs quote but here's what he meant to say- “It doesn't make sense to hire smart people and tell them what to do; we hire smart people so they can tell us what to do.”

This one is an inspiration!
