Recipe: Falafel Waffles with Tzaziki and Quinoa Salad (Feeds 2)
For tonight's recipe, you'll need:
- EQUIPMENT: lg pan or waffle iron, lg mixing bowl, stirring spoon, med pot, cutting board, sharp knife, measuring cup
- BASICS: salt, pepper, olive oil
- MEAT: none :)
- PRODUCE: 1 handful fresh dill, 1 handful fresh parsley, 1 handful fresh cilantro, 1/2 red onion, 1 beefsteak tomato, 1 cucumber or 3 Persian cucumbers
- CANS & JARS: 2 cups almond milk or coconut milk
- DRY & PACKAGED: 2 cups chickpea flour, 4 tsp baking powder
- ADD'L SEASONINGS: garlic powder
