Batch meal prep is the equivalent of buying yourself time. When life gets busy, healthy meals all too often become the first thing to drop off the list of priorities. So, get ahead of a full week and set yourself up for a blissfully tasty meal plan. Hearty veggie soups and stews are a fantastic way to up your veggie intake. I love infusing added protein with legumes like lentils and ensuring my batch meals are full of flavour.
