金瓜泥拌豆腐

材料1

豆腐500克,切成三角形状

金瓜200克,切成小块状

虾 6只 / 250克

清水400毫升

蒜头 3颗 剁碎

油 250毫升 (炸豆腐用)

糖半茶匙

胡椒粉 1茶匙

盐 半茶匙

甜豆 5根

酱清 15毫升

做法

1.虾去壳,留尾开背,去肠后用糖胡椒粉和盐搅拌均匀待用。

2.金瓜切小块状和400毫升的水一起煮10分钟后捞一半的金瓜块出来待用,其余的压成泥待用。

3.热锅加入250毫升的油,把豆腐炸成金黄色,并可倒出多余的油,剩15毫升,把蒜碎炒香,并加入虾煎两面金黄色后约一分钟后把搅拌好的金瓜泥倒入锅中。豆腐,甜豆和金瓜块也一起加入,最后加入酱清焖煮一分钟便可出锅。
