Ep#30 Nurse Kate O’Connor - Health Beyond Medicine - Coaches Corner

About 20 years ago, after the birth of her youngest daughter, Nurse Kate O’Connor began to gain weight on her small 5’2” frame and noticed that if she ate any carbohydrates during the day it would make her especially sleepy. Diet-induced sleepiness was a difficult challenge for a full-time working mother of three! This caused Kate to restrict her carbs and as the extra weight disappeared, she also noticed that she had much more energy. Kate maintained that weight loss and felt better for quite some time, but gradually, as her children left the house and she was able to have a slightly more relaxed lifestyle she moved towards eating more carbohydrates again.

Fast forward to a few years ago Nurse Kate was 52 years old, Peri-menopausal with hot flashes, having difficulty sleeping, and taking two different medications for Hashimoto’s thyroiditis as well as another for high blood pressure.

Kate happened upon the podcast Keto Talk with Jimmy Moore and Dr. Adam Nally. She binge-listened to all of those episodes because the science made sense to her and she was eager to change and to learn. A light-bulb went on for Kate from that period, and she gradually started to change and adapt to the keto lifestyle. Rather quickly Kate lost the weight she had gained, started having better sleep and best of all experienced far less brain fog and found she had her energy back for the first time in years.

Today Kate takes less than half the thyroid medication that she did three years ago and has not had a hot flash since she became fat-adapted. Her quality of life is much higher.

Always a lover of science Kate completed a BS in Biology from Worcester State University. Kate’s study in biology lead to an appreciation of physiology and the amazing abilities of the human body, which resulted in her pursuit and completion of a Nursing degree. Kate spent about 10 years working in the float pool of UMass Medical Center, which means that she worked on every floor of a bustling hospital, enabling her to learn constantly about the many different aspects of patient care. Kate spent another 5 years working in urgent care at UMass, where she was again in a position to see a broad spectrum of health concerns and treatment. This experience led Kate to the conclusion that Hippocrates’ words still ring true, “Let food be thy medicine and medicine be thy food”.

In 2018 Kate completed the NASM and AFAA approved Keto Coaching certification course and became a Certified Keto Coach.

In early 2019 Nurse Kate completed the Nutrition Network LCHF (low carb high fat) Certification Program offered by the Noakes Foundation. This online training was the first of its kind and is presented by national and international medical and allied healthcare experts in their field, on a range of topics related to LCHF nutrition and its implementation into clinical practice.

Today Kate O’Connor continues to research and learn more about the benefits of the ketogenic lifestyle.
